This weeks recipe is one I have made before. This time I altered it a bit. I think it turned out so much better. Normally you fry you hamburger and then mix all the other ingredients in it and then layer it with your tortillas and cheese in the crockpot and cook it on low for 4-6 hours. This time I just put all of the other ingredients in the crockpot and put it in the tortillas like you do with tacos. It was awesome.
The recipe goes as follows: 1 lb. ground beef browned in a skillet with onion and a chopped green pepper (I omitted this because we aren't big on peppers) add in diced tomatoes, rinsed and drained black beans, rinsed and drained kidney or pinto beans, 1 tsp. cumin, & 1/2 tsp chili powder. Start layering meat mixture, tortillas, & cheese. Heat in crock pot on low for 4-6 hours.
I really loved it served taco style. I think it also goes farther this way. Matt whole heartedly approved and thought it was good, he also likes to eat it over chips - Nacho Style.
