What's Cooking Wednesday: Mexican Hamburger Casserole


This was a recipe that sounded really good and easy, which is right up my ally. The actual meal this week wasn't the best though. I was okay, my kids liked it, but it wasn't my favorite.

The recipe requires:
1/2 lb. browned ground beef cooked with some onion; 14 oz. can tomato sauce; can of green chiles; 10 oz. can of cream of chicken soup; corn tortillas; and cheese.
mix in a bowl: beef, tomato sauce, chiles, and cream soup. Layer tortillas on bottom of 9 x 13'' pan, spread in meat mixture, layer more tortillas on top, sprinkle on cheese and bake at 300 for 30-45 minutes.

Next time I want to try something other than the cream soup in it. I also wouldn't mind it a bit spicier. All in all it was a success. Not everything that my kids like am I actually going to enjoy. I can also say there needed to be more substance in the filling like rice or veggies. It was lacking.
