No HFCS: Oreos

As I have said before, I am trying to eliminate all of the crappy high fructose corn syrup from our diet.  This treat is normally a weakness.  I absolutely love crunchy cookies with milk.  I really love Oreos, but don't love all of the nasty stuff in them.  I found this recipe from Bake at 350.  I wanted something really yummy.

Here I have mixed all of the dry ingredients together.  2 1/2 C. flour, 1/2 C. cocoa, 1/2 tsp. salt, 1 C. butter, 1 C. sugar, 1 egg, 1 tsp. vanilla.  and rather than roll them out...

I put the dough in my cookie press, so much easier, and they turned out so cute too

I baked them at 350 for 8 minutes a pan.

I think the cookies turned out really awesome looking.

The cream filling was a bit odd, I am not used to making frosting this way.  1 tsp. plus a heaping 1/4 tsp. of unflavored gelatin, 2 TBSP cold water, 1/2 C. shortening, 1 tsp. vanilla, and 2 1/2 C. powdered sugar.  The recipe said to mix the gelatin and the water and then to put that bowl into a larger bowl of hot water, until the gelatin dissolved and then to let it cool about 5 min.  

Mix all of the other ingredients together and then mix in the gelatin/water mixture.  Spread the mixture between two of the cookies...
