Pumpkin Pie Pudding

This recipe sounded really good.  I found this recipe in the Fix It And Forget It Lightly cookbook.
 
 
The ingredients

 
Before you do anything, make sure to grease your crockpot.  You start with a 15 oz. can of pumpkin and a 12 oz. can of evaporated milk.

 
Add in the 1 1/2 c. of sugar (the recipe calls for 3/4 c. of splenda)  and the 1/2 c. bisquick.

 
Then the 2 beaten eggs and 2 tsp. of pumpkin pie spice.

 
and of course the lemon zest.

 
Mix until the lumps are gone, then bake on low for 3 hrs.

 
Here is the done product.

 
My kids and husband loved it.  This was a really easy recipe.
