Low GI Meals: Peach Crisp

Ok, Matt really loves peaches.  I really prefer them cooked and he really likes them fresh, but doesn't mind them cooked either.  Matt had requested peaches for his lunched at work, but it was also his birthday.  For desert on his birthday I decided to make peach crisp with ice cream on the top.  Yummy.

I sliced and peeled my peaches into a glass 9x13 pan.  I mixed 1/2 c. brown sugar, 3/4 c. wheat flour (that I ground), 3/4 c. old fashioned oats, 1/2 tsp. cinnamon, 1/4 tsp. salt, and 1/2 c. melted butter and sprinkled it over the top.  Then I baked on 350 degrees until golden and the peaches were soft.

Scoop some ice cream (which vanilla ice cream is actually considered low glycemic too) over the warm crisp, it's the best.
